SMOKED CHICKEN

Serves 4

  • 1 1.4kg (3lb) chicken
  • 1 tbsp olive oil
  • Salt and pepper

Joint
the chicken into breast, wings and legs, then rub with oil and season
really well.

Place the pieces into the smoker and smoke/roast for 30
minutes.

The chicken will be light brown, gloriously juicy and tanged
with wood smoke. It’s that easy.

Box smokers, by the way, are readily
available and cost less than £50.
