Smoked salmon

Hot-smoked soy and honey-glazed salmon makes great picnic food

HOT-SMOKED SOY AND HONEY-GLAZED SALMON

Serves 10

  • 1 small bottle dark soy sauce
  • 2 limes (juice and zest)
  • 2 tbsp honey
  • Small side of salmon, cut into 2in (5cm) chunks


Mix
all the soy with the lime juice and zest and the honey.

Put the mixture
in a small pan and reduce it until sticky.

Paint it on the fish and
leave for two hours to marinate.

Place the fish in a box smoker (buy
from a kitchen shop) over oak chippings and smoke for 15 minutes on a
medium heat.
